I don’t know, Fish Wednesday might have to become a regular event. Mustard rubbed Copper River salmon roasted on a a bed of red onions, wild rice mix, and brocolli with a little lemon zest. Once again, you wish you’d stopped by. You know you can, right? You’re not pacing outside the house wondering if you can just drop in, are you?

I don’t mind when you talk about food such as Copper River salmon, but I can’t take it when you show a PICTURE of it, with wild rice and broccoli!!! Salmon is definitely on my diet list and I can’t have wild rice, but brown rice will do. Broccoli is okay for me, tho! I especially think about this dish on Wednesday afternoons after I finish with my Sweet Someones ukulele group at the Senior Center. mmmmmmmmm!

Alas…I have not had Copper River Salmon in so many years that I have forgotten what it even tastes like. Fish in NZ is really great–I would frequently catch Red Snapper off the rocks below my house, and it is far and away so much better than any I’ve had elsewhere–but the fish in Dublin? The food in Dublin? Dreadful, I think.
It’s odd–I never appreciated the food scene in Seattle until I left it. Have a big filet of Copper River for me, and savour every bite…
