Cook the noodles while you’re doing all the other stuff, okay? I used glass noodles, you could use just about anything – bean threads, rice noodles, whatever.
First, steam the spinach with a lot of grated ginger and a little sesame oil. Don’t add any water to it, there’s enough on the leaves from washing it. Cook it just until it wilts, then take it out of the pan. Then, add a little curry paste – I use the Thai Kitchen Red Curry Paste. It’s HOT, so use it sparingly. Pour in some coconut milk, maybe a quarter cup, not much really. Then simmer the fish in the curry and coconut milk. The coconut milk boils down into a nice thick sauce. Drain the noodles, toss them in a little sesame oil and some soy sauce. Sprinkle the spinach with sesame seeds.
I swear, it takes like, ten minutes. Okay, maybe fifteen. Anyway, it’s not a big deal. The biggest fuss is cleaning the damn spinach. That’s it. You’re on for Fish Wednesday.
