We’ve only got a tiny little Weber kettle so we’re not exactly set up to grill for the masses, but it’s been working out just fine for dinner for two, I tell you what. Last night I covered some chicken breasts in mustard, balsamic vintager, chili oil, and olive oil and, once they were perfectly grilled, we ate them on lightly dressed salad greens. And tonight, Fish Wednesday, (on schedule for those who are keeping track) I spread a little hoisin sauce on the sockeye salmon, wrapped it in foil, and set it on the grill next to some very fine asparagus.
Mmm mmm mmm, that’s some good eatin’, people, and the lack of fuss, why, you would not believe it! Grilling everything leaves you with next to no cleanup, something I enjoy in our new, dishwasher free state. And cooking fish outside means no smelly kitchen in the morning. (I don’t care what anyone says, unless your home is super ventilated, when you cook fish, it smells like fish the next day. It does.)
We followed dinner with a surprise dessert. J had pulled the raspberry puree out of the freezer, heated it up, and poured it over vanilla ice cream. Zing. The bite of the raspberries on sweet ice cream would only have been improved by a brownie underneath all of that, and don’t think we won’t be doing that, pronto. He’s a bit of a connoisseur of brownie mix, that J, so we’ll see if the stuff we bought on sale at the market last night is up to snuff.
It is Copper River season, so there’s little excuse for us to be eating sockeye, though the sockeye is 7 bucks about and the Copper River? 24. You heard me right, people, 24 dollars a pound. Last year we got it at Costco, fresh and not 24 dollars a pound. Costco also sells big boxes of brownie mix, the Hershey brand, which J likes okay, though his favorite is the Ghirardelli. Guess where we’re going next?
